Ingredients

180g butter, room temperature

3/4 cup caster sugar (or preferred sweetener)

1 teaspoon vanilla extract

2 free-range eggs

1 1/4 cups self-raising flour

1/4 cup plain flour

2 teaspoons ground cinnamon

1 drop of doTERRA Cassia essential oil

1 drop of doTERRA Cinnamon Bark essential oil

1/2 cup (125ml) milk
-
1 tablespoon caster sugar, extra
- 1 teaspoon ground cinnamon

1 tablespoon melted butter
Method

Preheat oven to 170°C. Grease and line a round cake tin with baking paper. Take the butter, sugar and vanilla and beat together until pale and creamy. Add the eggs, one at a time, beating well after each egg is added.

Fold in the milk in two batches into the flour. Once this is done add the Cassia and Cinnamon essential oils and gently stir until well combined. Spoon into the pan and smooth surface. Bake for 1 hour or until done (test with skewer).

Remove from oven and let it cool in the pan for approximately 15 minutes. Carefully turn out onto a wire rack. Mix extra sugar, ground cinnamon and melted butter together. Pour over cake and set aside to cool. Serve with fresh cream or on its own.
