- 300 g (3 cups) almond meal
- 2 teaspoons gluten-free baking powder or 1/2 teaspoon bicarb soda (baking soda)
- 4 free range eggs
- 60 ml (1/4 cup) macadamia nut oil, cold pressed coconut or olive oil
- 1 drop dōTERRA Cinnamon Essential Oil
- 2 tablespoons honey / brown rice syrup / pure maple syrup (or preferred sweetener)
- 200 g fresh or frozen blueberries (let them thaw out if using frozen)
- Preheat your oven to 170°C (325°F/Gas 3).
- Combine the almond meal and baking powder in a large mixing bowl and stir to combine.
- Next, add the eggs, oil, cinnamon essential oil and your preferred sweetener to form a batter.
- Gently fold in blueberries.
- Divide the batter into paper-lined muffin tins or a non-stick baking tin drizzled lightly with oil to prevent batter from sticking.
- Put in the oven and bake for 35–40 minutes until cooked through and golden.
