dōTERRA delicious // Blueberry Cinnamon Muffins (Gluten-Free!)

Perfect for breakfast or a mid-afternoon snack! You will need:
  • 300 g (3 cups) almond meal 
  • 2 teaspoons gluten-free baking powder or 1/2 teaspoon bicarb soda (baking soda)
  • 4 free range eggs
  • 60 ml (1/4 cup) macadamia nut oil, cold pressed coconut or olive oil
  • 1 drop dōTERRA Cinnamon Essential Oil
  • 2 tablespoons honey / brown rice syrup / pure maple syrup (or preferred sweetener)
  • 200 g fresh or frozen blueberries (let them thaw out if using frozen)
How:
  1. Preheat your oven to 170°C (325°F/Gas 3).
  2. Combine the almond meal and baking powder in a large mixing bowl and stir to combine.
  3. Next, add the eggs, oil, cinnamon essential oil and your preferred sweetener  to form a batter.
  4. Gently fold in blueberries.
  5. Divide the batter into paper-lined muffin tins or a non-stick baking tin drizzled lightly with oil to prevent batter from sticking.
  6. Put in the oven and bake for 35–40 minutes until cooked through and golden.
Cinnamon Essential Oil: The tropical Cinnamon tree is common to Southeast Asia where the highest quality Cinnamon is grown. Cinnamon essential oil is distilled from the bark of the tree.
