dōTERRA delicious // Soba Noodle Veggie Salad

You will need: Serves 4-6 Noodle Salad:
  • 1 packet soba noodles (or buckwheat soba noodles for gluten-free option)
  • 1 bunch green onions, chopped 
  • ¾ cup chopped cilantro
  • 1 red capsicum, sliced very thin
  • ¼ head of red cabbage, very thinly sliced
  • 3 whole carrots, juliennd
  • 2 cups shelled edamame, steamed (optional)
  • ½ cup toasted sesame seeds or pine nuts (serving)
Noodle Sauce:
  • 3 Tbls freshly grated ginger
  • 1 teaspoon sesame oil
  • 1½ teaspoon red pepper flakes
  • 2 Tbls reduced sodium tamari (or soy sauce, just be sure it’s reduced sodium or it will taste too salty)
  • 7 drops dōTERRA Lime essential oil
  • 3 Tbls freshly squeezed lime juice
  • 3 Tbls rice-wine vinegar
  • 1/2 teaspoon coarse sea salt
  • 1/4 teaspoon freshly ground pepper
  • 3 Tbls quality peanut oil, olive oil or vegetable oil
Soba_Noodle_Veggie_Salad How: 
  1. Cook soba noodles according to directions, and rinse in a colander.
  2. Chop up all your vegetables, and blanch with hot water while you make the sauce.
  3. Combine in a small bowl the ingredients for the sauce
  4. Pour the dressing into the pasta then add the veggies and toss well to combine. Sprinkle with sesame seeds or pine nuts and enjoy!
